A one-cook kitchen in Seattle, run by a mom whose dishes feel like home. Lauren works in batches small enough to taste every single one — fresh produce at the center of each plate, protein that does real work, and real flavors from herbs and spices.
Lauren has worked with food since her teen years, growing up working in kitchens, delis, and coffee shops. She spent most of her 20s and early 30s working in food tech operations. She started her career in food entreprenuership as a sourdough bakery owner in Kansas City. She built her bakery so she could spend more of her days with her daughter Billie. Running a bakery taught Lauren the main principle everything here still runs on: whole ingredients and as few as possible. Eating within seasons and consuming a variety of plants with each meal. Fresh herbs and homemade bases are favored. Dressings are simple and made from scratch. Her food is cooked to nourish a variety of people, built from the same passion she cooks for her own family.
Billie is Lauren's first daughter and her guiding light in life. She was a bold, strong baby girl who loved her family, her garden, baking, Bluey and Frozen. Billie passed away in 2024 extremely suddenly in the worst way imaginable. She had an undiagnosed and very rare form of pediatric cancer. So rare in it's presentation that the diagnosis has changed from neuroblastoma to germ cell tumor after she passed. Billie's kitchen is an ode to Billie in every way. The kitchen carries her name and everything she is — playful, smart, loving, inspired. We carry her everywhere and we fight to raise awareness for childhood cancer.
